Healthy Snack Nuts

Sometimes during the day you just need something to snack on....maybe it's because of low blood sugar or maybe when you were rushing out the door on the way to work, you just didn't eat enough and you are plain ole hungry! After a while, you become hungry and cranky...or as a friend likes to say "Hangry"!  This is a simple recipe designed to give you a healthy fat along with some sweetness and salt to perk up your taste buds and keep you from getting "hangry". Rather than reach for that donut or bagel or other bad carb/sugar-loaded snack that will just cause another blood sugar crash, reach for these instead!  Your taste buds and adrenals will thank you!


Snack Nuts


Ingredients (go for organic where possible, but all are available at regular grocery stores)


  • 2-3 cups RAW nuts of your choice (I go for mixed - almonds, walnuts, pecans, cashews, brazil)

  • Raw honey

  • Coconut oil (organic, unrefined)

  • Sea Salt (celtic is best, just don't use regular table salt)


Place the nuts in a bowl.

Combine 1/4 cup of honey and 1/4 cup of coconut oil in a sauce pan and boil for 3 minutes. 

Remove from heat and add 1 teaspoon of sea salt.

Pour syrup over nuts and toss/mix. 

Spread nuts on baking sheet.

Bake at 250 for 1 hr, turning every 15 mins. 

Voila!  Let them cool and eat.

I put them in snack size ziplock bags for portion control. It's a great, healthy snack that

helps quench a sweet or salty tooth.
